Vindaloo is a spicy Goan curry traditionally made with pork and its Portuguese ancestors' dish, "carne de vinha d'alhos" (meat in wine and garlic). It includes dried red chilies for heat and a bright color, ginger and garlic for pungent flavor, and vinegar to provide the signature tang. Other spices like coriander, cumin, peppercorns, and cinnamon are also common. While pork is the traditional meat, modern versions often feature chicken, beef, or lamb, and vegetables can also be added to the dish. |
